JOB DESCRIPTION

Lasseters is the centre of Entertainment in Alice Springs offering guests deluxe style accommodation rooms, at 4½ star rating which allow visitors to experience modern facilities in a desert setting. All rooms and suites are non-smoking and have their own private balcony or courtyard with views of the MacDonnell Ranges, the Alice Springs Golf Course or the famous dry Todd River.

Lasseters has multiple F&B outlets, a casino, a hotel, a fully equipped gym and a Day Spa and adjoins the Alice Springs Convention Centre.

The position of Executive Chef is responsible for and overseeing the day-to-day operations. Ensuring the delivery of high-quality food and customer service. To lead and enhance the organisation’s performance and the capability of all kitchen staff.

REQUIREMENTS

WHAT - Experience and competency I have

  • Formal qualifications in management, technical cookery, tertiary qualifications
  • Experience of at least four years as an Executive Chef

  • Responsible for the day-to-day running of all chefs and kitchen hands assigned shift
  • Liaise with F&B and Marketing to create appropriate menu’s and pricing regimes which meet target audiences 
  • Responsible for ensuring high-quality standards are maintained in the preparation of food 
  • Responsible for cost control
  • Responsible for wastage management
  • Ensure stock levels are managed and secured to enhance quality, quantity and shelf life
  • Build supplier relations to obtain best price and quality of food products
  • Knowledge of Hazard Analysis Critical Control Points
